It has been super busy for us with weddings and other events the past few weeks, so please excuse my absence, which may continue for a few more weeks, because we still have 2 more weddings and some family coming to town to visit!
I hope you’ve all been having a fabulous summer so far and that your kiddos aren’t driving you too crazy. If your kids are anything like The Twincesses, you’re probably already way past crazy, and well on your way to full blown mayhem and insanity, like me! People say I’ll miss these days once the girls are older, but right now I’m having a hard time believing it…
Anywho, my beauties played soccer this summer, and had a wind up party, so I decided to whip up a batch of Cookies + Cream Cupcakes to bring and am sharing the recipe with you! Since I always do my baking in big batches, to avoid multiple messes and clean ups, I made extras for a friends house-warming party and for Hubby’s birthday tomorrow as well!
Oreo’s are one of those cookies that I never eat unless they’re in something, like ice cream or another dessert. I think it’s because they’re so darn tasty that I’d probably eat an entire box if they were around! Cupcakes are a great way to eat Oreo’s , and this recipe is super easy because I just jazzed up a store bought cake mix, to make it taste more homemade, and then made the frosting. If you prefer homemade cupcakes, just make your favorite chocolate cake recipe, or try mine here and follow my recipe for the yummiest buttercream icing!

To make store bought cake mix taste homemade;
– add 1 egg more than the box calls for
-substitute milk where recipe calls for water
-substitute butter where recipe calls for oil, and double the amount
-mix all together + bake according to package directions
P.S. If you need the soccer theme, I purchased felt soccer stickers from Michael’s craft store, and put them onto a toothpick, then inserted into a cupcake. Super simple, and ridiculously cute!
