Happy Humpday Lovelies!
Hope you’re all having a good week so far! We’re all at home sick, and have been since Monday, including poor Hubby, who seems to have it the worst. Once we’re all better I think I’ll have to whip up Hubby’s fave dish again for him, and which I’m sharing the recipe for today!
When Hubby and I were dating we used to love going to this cute little Greek restaurant called Cosmo’s. We always went for special occasions like Valentine’s Day and our anniversary. We were both obsessed with their dish called “Smothered Chicken”. It was soooo delicious! Unfortunately, Cosmo’s closed down about 5 years ago and we’ve never found a chicken dish so tasty anywhere else!
Last week, I drove by where Cosmo’s used to be, and it reminded me of our date nights, and the Smothered Chicken, so I went to the store and bought the ingredients I could remember, to try and recreate the dish.
Well, I don’t think it was exactly the same, but, Hubby LOVED it. He said it’s definitely in the top 3 of his favorite meals I make, number 1 being my copycat of Olive Garden’s Zuppa Toscana. Winning! Wife of the year, right here!
I don’t know about you, but, I am always looking for new meat recipes, so I thought I’d share my version of Smothered Chicken today! I hope you enjoy!
