Copycat Olive Garden Zuppa Toscana

Hope you’re all having a good week so far! The weather has taken a real turn over here, and it’s gotten quite cold! It has me craving some delicious hot soup which thankfully I have a ton of in my freezer!  A few weeks ago I whipped up a ginormous batch of our fave soup, and today I’m going to share the recipe with you!

This recipe is one of the most “famous” dishes I make, Zuppa Toscana! Everyone who’s ever had it LOVES it. and I suspect some people are only friends with me because I make it and invite them over to enjoy some! I used to work at Olive Garden as a waitress when I was a student (while Hubby and I were dating) and he used to love when I would bring him home Zuppa Toscana from the restaurant. It was a sad day for Hubby when I quit working at OG. Lucky for him it just took a little trial and error on my part to figure out and master a dupe of the OG recipe on my own.  Since then it’s been my go-to recipe when the weather is cold and we all need a lil comfort food.  I’ve made it for dinner parties, family, and guests, and it’s always a crowd pleaser!  I tend to make this soup about every 3-4 months, but I make a huuuuge batch (usually 4X the recipe) and freeze some so that we usually get around 5 meals (for hubby, The Twincesses and I), plus some leftovers.

Hubby says that my soup is better than OG’s because I make it to suit our preferences. He likes extra sausage and potatoes, while I like extra broth and kale. The Twincesses don’t care, as long as we give them crackers with their soup, even though crackers totally don’t belong in Zuppa Toscana!  

Full disclosure, I used to make everything from scratch but SHOCKER life as a mama to monsters…I mean Twincesses, required that I speed up the cooking process! So now I’m a big cheater and surprisingly prefer the taste of the soup now that I use a lot of pre-made ingredients. If you have the time feel free to make the pre-made stuff from scratch, either way the soup will taste amazing, I promise! If you make this soup, be sure to let me know how it turned out!

A recipe dupe for Olive Gardens famous soup! Delicious creamy broth, with fresh kale, potatoes, and mild italian sausage.

  1. Prep all the veggies. Wash and cut potatoes into cubes, leaving skin on, finely dice onions, and wash and cut kale into bite sized pieces.
  2. If using mild Italian sausages (my fave are Kirkland, at Costco), squeeze the sausages until all the meat is out of the casings. Throw out casings and fry sausage until brown. If you're using ground sausage, also cook until brown.
  3. Remove sausage from pan, and use same pan to cook onion and garlic until onions are translucent.
  4. Place cubed potatoes into a large pot, and add chicken broth. Cook on high until it comes to a boil, and then reduce to med-high, continue to boil for 10 minutes, or until potatoes are soft and cooked through.
  5. Reduce heat to low-medium and add all other ingredients (sausage, bacon bits, onions, garlice, kale, cream and pepper) to pot, letting cook for 10 minutes
  6. Optional: Sprinkle Romano cheese onto individual bowls for an extra delicious flavor, or add chili flakes and extra pepper to spice it up!
