Eggnog Sugar Cookies

You guys, it’s only a few more weeks until Christmas!  Have you started your holiday baking yet? The Twincesses and I have been baking up a storm in our house! I put my controlling nature and my OCD aside for a little bit and let the girls make cookies all by themselves, from start to finish!  They did so good, and had a ton of fun!

The cookies that my lil Betty Crocker’s made are Eggnog Sugar Cookies, and I’m sharing it with you all today!  For this recipe I take my Mother-in-laws famously simple and tasty sugar cookie recipe, and modify it just a touch, to turn it into a delicious holiday cookie that is sure to be a holiday hit!

Eggnog Sugar Cookies
A fun holiday twist for a classic sugar cookie!

Cookies
  1. Mix butter and sugar together until light + fluffy (in kitchen aid mixer, or in a bowl with electric mixer)
  2. Add in the egg + vanilla + mix well
  3. In a separate bowl combine flour + baking powder
  4. Add dry ingredients to wet ingredients + mix well, using hands if necessary, until dough is fully mixed + soft
  5. Roll out dough (1/4 inch thick or more) + use cookie cutters of your choice
  6. Line baking sheet with parchment paper before baking cookies at 325 F for 8-10 minutes, until the edges of the cookies start to turn golden brown
  7. Once cookies are baked + have cooled down, decorate as desired with Eggnog Royal Icing , candie, or sprinkles + Enjoy!
Eggnog Royal Icing
  1. Combine + beat all ingredients with electric mixer on medium speed until icing forms stiff peaks (about 7-10 min) If you want a thinner consistency for your icing (to flood cookies) add more eggnog OR water 1-2 tbsp at a time until desired consistency is achieved.
  2. If you don't plan to flood ice cookies, use a butter knife or small spatula to spread icing onto cooled cookies
  3. Immediately top with sprinkles if desired + let sit for approximately 4 hours, until icing has hardened before stacking cookies
