St. Patrick’s Day Pot of Gold Cupcakes

Happy Friday Lovelies!

I hope you’ve all had a great week!  I can’t believe that it’s already March!  Somehow the last month seemed to just fly by!  But since it is, and St.Patrick’s Day is just around the corner, it gave me an excuse to do some baking with my favorite lil helpers!  

I decided to make a treat that The Twincesses could bring to preschool to share with their friends and teachers, so we made what I call “Pot of Gold Cupcakes”. They’re not only a quick and easy treat to whip up, but it’s also super yummy!  Give it a shot!

First, find yourself some adorable baking partners!


 Seriously, I can’t even! 

Then to begin, make your fave homemade or store bought cake recipe.  I used a store bought cake mix.  I like to make it taste more homemade by using butter instead of oil, and doubling the amount the box calls for, using milk instead of water, adding an extra egg, and a tsp of vanilla extract.


This is optional, you can make the cake mix green like we did!  Then fill your muffin liners 2/3 full with the mix, and bake at 325 for 22-24 min.  



To decorate 24 cupcakes you will need:

-2 packs (135 g each with 15) sour rainbow belts 

-mini Rolo chocolates

-yellow sugar sprinkles

-1/4 cup white icing (I used buttercream, but any kind will do)

-4 cups of buttercream icing to frost cupcakes (my fave recipe is here, cut it in half!)

-green food coloring or Wilton color gel

Frost the cupcakes with the green icing. You can make your icing as light or as dark green as you want!   To frost I filled a piping bag and (without a tip) I swirled the icing in a circular motion. 

You can frost them anyway you’d like, as long as the cupcake is covered! 

Next, cut about an inch off the length of the sour rainbow belt candy, as they’re a little too long.

Then, put the white icing into a piping bag with any tip (I used a round tip) and pipe some icing onto the Rolo chocolates.

Next, dip the icing topped Rolo’s into the sprinkles.

 Look at all of those pots of gold!!!

Now bend the sour rainbow belt into the shape of an arch, and stick into the icing. Place a pot of gold on each side. THAT’S IT!  All done, and now you’ve got some super cute and tasty Pot of Gold Cupcakes for St. Patty’s Day!
